Job Purpose

To lead and elevate the entire Food & Beverage operation, curating exceptional dining and social experiences that embody Regent's philosophy of understated luxury, sophistication, and intuitive service. The Director of Food & Beverage is responsible for driving operational excellence, culinary innovation, commercial performance, and destination positioning across all restaurants, bars, lounges, banqueting, and in-room dining experiences.

Key Responsibilities

1. Strategic F&B Leadership

  • Develop and execute the hotel's Food & Beverage strategy aligned with Regent brand positioning and business objectives
  • Position all restaurants and bars as destination venues for both hotel guests and the local market
  • Continuously evolve concepts, experiences, and service rituals in line with global luxury dining trends
  • Ensure a cohesive and elevated guest experience across all F&B touchpoints

2. Operational Excellence

  • Oversee day-to-day operations of all restaurants, bars, lounges, banqueting, and in-room dining
  • Ensure flawless service execution, operational consistency, and attention to detail across all outlets
  • Maintain Regent and IHG brand standards in service, presentation, hygiene, and guest engagement
  • Conduct regular operational reviews, inspections, and quality assurance checks

3. Culinary & Beverage Innovation

  • Partner closely with the Executive Chef and Bar leadership to develop innovative culinary and beverage programs
  • Curate signature dining concepts, wine programs, mixology experiences, and seasonal activations
  • Support collaborations with renowned chefs, beverage partners, and culinary artisans where appropriate
  • Drive sustainability and responsible sourcing practices within menu development

4. Guest Experience & Personalization

  • Ensure personalized and intuitive service across all dining experiences
  • Engage actively with VIP guests, repeat patrons, and key clientele
  • Drive guest satisfaction and service recovery initiatives with a luxury mindset
  • Foster memorable dining moments through emotional connection and refined hospitality

5. Commercial & Financial Performance

  • Develop and manage F&B budgets, forecasts, and profitability targets
  • Drive revenue growth across outlets, events, and experiential dining initiatives
  • Optimize pricing strategies, productivity, labor management, and cost control
  • Monitor and analyze key business performance indicators and market trends

6. Talent Leadership & Culture

  • Lead, inspire, and develop a high-performing F&B leadership and operational team
  • Foster a culture of excellence, creativity, collaboration, and accountability
  • Support succession planning, talent development, and luxury service training initiatives
  • Ensure strong colleague engagement and retention within the department

7. Banquets & Events Excellence

  • Oversee banquet and event operations ensuring seamless delivery of weddings, social events, and corporate functions
  • Collaborate with Sales & Events teams to maximize event revenue opportunities
  • Ensure personalized and elevated experiences for all events and celebrations

8. Marketing, Positioning & Brand Presence

  • Partner with Sales & Marketing to strengthen the hotel's F&B positioning and visibility
  • Support PR campaigns, influencer collaborations, media events, and award submissions
  • Enhance outlet reputation through exceptional guest reviews and industry recognition
  • Drive innovative activations and experiential dining campaigns

9. Compliance & Risk Management

  • Ensure compliance with food safety, hygiene, health, and liquor licensing regulations
  • Maintain operational safety standards and audit readiness across all outlets
  • Ensure proper inventory control, cash handling, and loss prevention procedures

10. Stakeholder Collaboration

  • Work closely with Rooms, Wellness, Finance, Engineering, and HR teams to support overall hotel objectives
  • Collaborate with ownership and corporate teams on strategic F&B initiatives
  • Maintain strong relationships with suppliers, beverage partners, and luxury brands

  • Strong luxury F&B operational and commercial leadership
  • Deep understanding of global dining trends and guest expectations
  • Exceptional leadership and people development skills
  • Financial acumen with strong revenue and cost management capability
  • Creativity and innovation in guest experience design
  • Strong communication, presentation, and stakeholder management skills

Qualifications & Experience

  • Bachelor's degree in Hospitality Management, Culinary Arts, Business, or related field
  • 10–15 years of progressive Food & Beverage experience, including senior leadership roles
  • Proven experience within luxury or ultra-luxury hotels, resorts, or standalone dining venues
  • International luxury hospitality exposure preferred

Preferred Experience

  • Pre-opening or concept development experience in luxury hotels
  • Experience managing destination restaurants or award-winning outlets
  • Strong exposure to fine dining, mixology, wine programs, and luxury banqueting operations
