Position Statement

The Chef de Cuisine (Speciality Italian Restaurants) is responsible for leading the culinary operations, execution, and standards of specialty Italian restaurant concepts. The role ensures exceptional food quality, consistency, and operational efficiency while maintaining alignment with brand identity and culinary philosophy.

The position provides full operational leadership of the assigned restaurant kitchen while supporting brand alignment, menu development, and culinary excellence in coordination with international culinary stakeholdes.

This role champions Nancy Silverton's culinary philosophy, ensuring the highest standards of craft, consistency, and guest experience. The Chef de Cuisine fosters a high-performance kitchen culture grounded in teamwork, accountability, innovation, in accordance with Hilton's brand values.

Responsibilities

Culinary Leadership & Vision

  • Lead the development and expression of the restaurant's culinary identity, ensuring authenticity, creativity, and adherence to brand philosophy that is align to Hilton values.
  • Guide menu innovation, seasonal updates, and culinary storytelling that reinforce the restaurant's positioning.
  • Uphold artisanal techniques, ingredient integrity, and craftmanship aligned with Nancy Silverton's culinary ethos whilst balancing Hilton Singapore Orchard's values.
  • Ensure every dish reflects consistency, precision, and excellence.
  • Serve as the principle culinary ambassador of the restaurant within Hilton Singapore Orchard.
  • Represent the culinary vision in internal leadership forums, media engagements, brand activations, and partnerships as required.
  • Coordinates with visiting brand teams, guest chefs, and collaborators to ensure smooth execution of brand-led events with the Hotel's Marketing team.

Team Leadership & Culture Building

  • Lead, inspire, and mentor a diverse brigade of chefs and culinary professionals.
  • Foster a culture of learning, discipline, teamwork, and creative expression.
  • Establish clear performance expectations and provide continuous coaching, feedback, and talent development to grow the team.
  • Build a strong succession pipeline through structured learning & development actions.
  • Uphold and communicate the culinary philosophy behind the restaurant's concept to all team members and stakeholders.
  • Model Hilton values and cultivate a workplace built on respect, collaboration, and shared standards.

Operational Excellence

  • Oversee all culinary operations for the restaurant kitchen, ensuring daily readiness, smooth service flow, and consistent product quality.
  • Maintain high standards of mise en place discipline, station management, and pass/expediate leadership.
  • Ensure compliance with Hilton Hygiene standards, HACCP, food safety, audits, and all local regulatory requirements.
  • Collaborate closely with restaurant service leadership to deliver seamless service choreography and exceptional guest satisfaction.

Financial & Performance Management

  • Lead and manage culinary cost performance, including food cost, yield management, waste control, and vendor relationships.
  • Maintain accurate inventory, procurement discipline, and product quality standards.
  • Support labour planning and productivity while maintaining a positive and sustainable team environment.
  • Use data, feedback, and operational insights to continuously improve performance and efficiency.

Cross-Functional Collaboration

  • Partner closely with the hotel's F&B and Culinary leadership team on new initiatives, promotional events, operational planning, and guest experience strategies.
  • Engage constructively with the hotel's support departments; purchasing, finance, human resources and operations to support the overall business performance.
  • Provide culinary leadership during menu changeovers, training cycles, and special activations.

  • Have at least 10 years of progressive culinary leadership experience in high-volume premium dining environments.
  • Expertise in Italian, Californian, fire-led or artisanal cooking styles would be strongly preferred.
  • Proven ability to inspire and lead dynamic culinary teams with structure, clarity and passion.
  • Strong financial acumen: food cost, waste control, purchasing, and productivity management.
  • Exceptional communication and interpersonal skills, including the ability to engage with international stakeholders.
  • Demonstrated ability to balance creative brand expression with operational discipline and business priorities.
  • Possess high degree of integrity at work.
  • Strong leadership and able to motivate teams.
  • Adaptable working in fast-paced environments.
  • Strong guest focus mindset and brand promise representation.
