About the Role
Join Mokky's Pizza & Coffee as we expand our central kitchen operations! We're looking for an experienced Executive Production Chef to lead large-scale food production and oversee R&D for our growing network of outlets. This role focuses on ensuring consistent product quality, food safety compliance (GMP/HACCP/HALAL/ISO 22000), and efficient production processes, while driving innovation and cost-effectiveness.
Key Responsibilities
- Lead and manage central kitchen operations, including food preparation, production planning, and distribution.
- Monitor inventory, control costs, and implement food safety & hygiene standards.
- Manage and mentor production teams, ensuring high performance and compliance with company policies.
- Provide input and oversight on R&D projects to ensure seamless integration into production.
- Drive continuous improvement initiatives to enhance efficiency and reduce wastage.
- Oversee maintenance and proper functioning of kitchen equipment.
- Liaise with external authorities to ensure all necessary permits and licenses are obtained and maintained.
- Identify opportunities for process improvement and implement best practices.

What We're Looking For
- 7-10 years experience in central kitchen or multi-outlet food production management.
- Strong knowledge of food safety standards and Halal compliance.
- Proven track record in team leadership, cost management, and process optimization.
- Food production management and central kitchen operations experience
- Recipe development, menu planning, and R&D skills
- Experience in managing kitchen staff and training
- Knowledge of food safety and health regulations
- Strong leadership and teamwork abilities
- Excellent organizational and time management skills
- Ability to work on-site in Shah Alam/Bukit Jelutong
- Previous experience in the food industry is a plus
- Culinary arts degree or equivalent qualification is preferred
