Oversee the F&B operations to provide nutritional and healthy meals for residents, staff and visitors, including menu planning through working with Dietitian
Lead and manage the employees in the department to ensure competent, motivated and productive food service staff. This includes compliance to policies and procedures, performance standards and regulatory requirements, structured onboarding and training processes as well as proper performance evaluation.
Maintain effective control, storage and handling of raw / food products. This includes managing proper stock control, food costs and wastage, quality handling of bulk preparation of food, and establishing standards for the handling, preparation, and processing of food products.
Maintain overall cleanliness, hygiene and safety standards of the restaurant, kitchen and storage area, ensuring all food handlers are properly certified and undergone adequate training.
Achieve required sales/revenue by managing the profitability of the F&B operations i.e. analyze sales, formulate pricing of menu, reduce wastages, maintain profit margins, improve purchasing strength/negotiations. Develop and implement sales strategies.
Implement new development and continuous improvement for the department, especially on policies and procedures to improve operational efficiency, productivity, customer satisfaction and nutritional meals.
Manage the day-to-day operations of Banquet Halls and meeting rooms, including the planning of menus for meeting packages, taking care of the maintenance of Banquet Halls and meeting rooms and responsible for selection of external caterer catering food for functions when required.
Job Requirement
A bachelor's degree or equivalent, preferably in business or related.
Minimum 5 years working experience in F&B, with experience driving sales, marketing & business.
Good communications, problem solving and negotiation skills.
A dynamic team player with strong analytical ability
Ability to work independently and handle multiple tasks in a fast-paced environment.
Willingness to work flexible hours, including weekends when necessary for events.
Fluency in English; proficiency in additional languages is an advantage.
Computer literate in Microsoft Office and Microsoft PowerPoint.
