Job Description

Job Summary

The Head of Operations is responsible for leading and overseeing the end-to-end operational performance of all Ayam Gepuk Pak Gembus outlets nationwide. This role ensures operational excellence, brand consistency, cost efficiency, food safety compliance, and scalable growth while driving strong outlet performance and customer satisfaction.

Requirements & Qualifications

  • Bachelor's Degree in Hospitality Management, Business Administration, or related field.
  • Minimum 1015 years of experience in the F&B industry, with at least 5 years in a senior operations leadership role.
  • Proven experience managing multi-outlet or chain restaurant operations.
  • Strong understanding of F&B cost structures, SOP-driven operations, and compliance requirements.
  • Experience with QSR or casual dining brands is highly preferred.

Key Responsibilities

Operational Leadership & Strategy

  • Lead and manage overall restaurant operations across all outlets.
  • Develop and implement operational strategies, SOPs, and best practices to support business growth and efficiency.
  • Translate company goals into operational execution at outlet level.

Outlet Performance & Cost Control

  • Oversee outlet-level P&L performance, including sales, food cost, labor cost, and operational expenses.
  • Drive cost optimization initiatives while maintaining product quality and service standards.
  • Monitor KPIs and implement corrective actions to improve outlet profitability.

People Management & Capability Building

  • Lead, coach, and develop Area Managers, Outlet Managers, and operations teams.
  • Ensure effective manpower planning, training, and succession planning.
  • Work closely with HR on recruitment, performance management, and disciplinary matters.

Brand Standards & Compliance

  • Ensure strict adherence to brand standards, food safety, halal requirements, and regulatory compliance.
  • Conduct regular audits and outlet inspections to maintain consistency and quality.
  • Oversee implementation of new menus, promotions, and operational initiatives.

Expansion & Project Management

  • Support new outlet openings, renovations, and relocations.
  • Collaborate with Business Development, Finance, Supply Chain, and Marketing teams on expansion plans.
  • Ensure readiness of people, systems, and processes for new outlets.

Reporting & Stakeholder Management

  • Provide regular operational performance reports to senior management.
  • Act as the key liaison between operations and HQ departments.
  • Identify operational risks and propose improvement plans.
