The Assistant Restaurant Manager supports the Restaurant Manager in leading the day-to-day operations of Hanging Gardens, RCX's new fine-dining concept at Menara Conlay. This role ensures flawless guest service, premium hospitality standards, and smooth operational flow while driving team performance, guest satisfaction, and revenue results.
Responsibilities
- Guest Experience & Service Excellence
- Ensure every guest receives personalised, seamless, and memorable fine-dining service.
- Handle VIP guests, special occasions, and guest recovery with tact and professionalism.
- Perform floor management duties during service to ensure smooth coordination between FOH & BOH.
- Maintain RCX hospitality standards, grooming, and service sequence.
- Operational Leadership
- Assist in daily opening/closing procedures, reservation management, table allocations, and pacing.
- Manage daily service briefings, staff deployment, station assignments, and service flow.
- Ensure compliance with food safety, hygiene, and all internal SOPs.
- Work closely with the Chef and Kitchen team to ensure menu, dish knowledge, allergy management, and service timing are up to standard.
- People Management
- Coach, motivate, and guide service staff to deliver consistent luxury-level service.
- Support training plans, LDC requirements, and development of new hires.
- Participate in performance reviews, disciplinary actions, and conflict resolution.
- Foster an engaged, high-energy and collaborative team culture.
- Sales, Revenue & Cost Management
- Support wine, beverage, and menu upselling techniques among staff.
- Monitor daily sales performance, guest spend per head, and reservation forecasts.
- Work with Restaurant Manager to manage labour scheduling, wastage control, and operating expenses.
- Assist with monthly stock count and inventory accuracy.
- Brand Standards & Continuous Improvement
- Maintain the ambiance, cleanliness, music, setup, and aesthetics expected of a luxury fine-dining outlet.
- Support implementation of new initiatives, menu changes, and marketing collaborations.
- Identify service gaps and propose improvements to the Restaurant Manager.
Qualifications
- Diploma/Degree in Hospitality, F&B Management, or related field preferred.
- WSET certification or strong wine knowledge is a strong advantage.
Required Skills
- Strong leadership with ability to motivate and coach service teams.
- Excellent communication skills articulate, tactful, guest-focused.
- Knowledge in wine, mixology basics, menu pairing, and fine-dining service steps.
- Strong problem-solving, guest recovery, and conflict-handling skills.
- High attention to detail, especially in service flow, plating, setup, and ambiance.
- Able to work flexible hours, weekends, public holidays, and peak events.
Preferred Skills
- Experience handling VIP guests, high-pressure service, and premium menu knowledge is required.
