Are you a motivated wine professional with a passion for service and a desire to grow within a luxury hospitality environment As Sommelier, you will work under the supervision of the Director of Wine and Head Sommelier to support daily wine service, assist with pairings, and provide knowledgeable recommendations to guests. You will help maintain cellar organization, support inventory control, and uphold wine service standards, while developing your expertise within a world‑class beverage program.
What will I be doing
As the Sommelier, you will be responsible for performing the following tasks to the highest standards:
Operations
- Support daily wine service operations across F&B outlets under the direction of the Head Sommelier.
- Assist with cellar organization, stock rotation, and maintenance of wine readiness before service.
- Coordinate with culinary and service teams to deliver smooth wine pairings during service.
- Review reservations and guest profiles to assist in anticipating guest preferences.
- Maintain a visible floor presence, engaging guests with knowledgeable and courteous wine recommendations.
- Assist in handling guest feedback and special wine requests professionally.
- Ensure proper wine storage, handling, and hygiene standards are followed.
- Support execution of wine dinners, events, and VIP services.
Teamwork & Culture
- Support training of service colleagues on wine basics and pairings.
- Participate in pre‑service briefings highlighting wine selections and pairings.
- Promote teamwork and a positive, professional work environment.
- Demonstrate strong collaboration with service and kitchen teams.
Administration
- Assist with cellar inventories, stock counts, and record keeping.
- Support proper documentation of wine sales and guest preferences.
- Follow SOPs and wine service standards consistently.
- Participate in supplier tastings and internal training sessions when required.
Financial & Cost Awareness
- Support upselling initiatives through confident wine recommendations.
- Assist in stock control to minimise waste and maintain cost efficiency.
- Ensure accurate billing and adherence to cash handling procedures.
Guest Experience
- Deliver personalised and attentive wine service aligned with luxury brand standards.
- Support special occasions and high‑profile events with attention to detail.
- Build rapport with returning and wine‑focused guests.
Health & Safety
- Comply with hygiene, sanitation, and wine storage regulations.
- Report maintenance or equipment issues promptly.
- Practice and promote responsible alcohol service.
Communication & Collaboration
- Communicate effectively with the Head Sommelier and service leadership.
- Maintain professional conduct with guests, colleagues, and suppliers.
- Support consistency of wine service standards across outlets.
Other Duties
- Stay informed on wine regions, styles, and service trends.
- Support sustainability and responsible sourcing initiatives.
- Assist with pre‑opening, training, and operational setup as required.
- Perform additional duties as assigned by management.
